Abstract

La presente invención se refiere a un método para controlar el crecimiento de microorganismo contaminantes en un proceso de fermentación, caracterizado porque comprende agregar un compuesto que libera peroxígeno libre de nitrógeno a una o más etapas de un proceso de fermentación, en donde el proceso de fermentación comprende (i) proporcionar un recipiente de fermentación; (ii) proporcionar un inoculante, un azúcar fermentable y agua del proceso; (iii) introducir por separado, o en cualquier combinación, el inoculante, el azúcar fermentable y el agua del proceso en un recipiente de fermentación para proporcionar un caldo de fermentación; y (iv) poner en contacto el inoculante con el azúcar fermentable en el recipiente de fermentación a una temperatura a la que el inoculante convierte el azúcar fermentable en etanol. Un método para controlar el crecimiento de microorganismos contaminantes en un proceso de fermentación que usa un compuesto que libera peroxígeno libre de nitrógeno. El método comprende agregar un compuesto que libera peroxígeno libre de nitrógeno a una o más etapas de un proceso de fermentación. En este método, puede agregarse un compuesto que libera peroxígeno libre de nitrógeno a uno o más componentes de un caldo de fermentación que comprende inoculante, azúcar fermentable y agua del proceso.
