Abstract

La invención se refiere a un método para preparar una composición de frutas en conserva que tiene un valor Brix de 10° a 60°, un contenido de agua de al menos 20% en peso y un pH en el intervalo de 3.0 a 4.2, el método comprende: • proporcionar una composición de frutas no en conserva que tiene un contenido de agua total de al menos 15% en peso y que comprende no más de 85% en peso de materia seca, la materia seca comprende 30-92% en peso de materia seca de azúcar seleccionada de fructosa, glucosa, sacarosa y combinaciones de las mismas y 8-80% en peso de materia seca de materia de fruta seca no de azúcar; • combinar la composición de frutas no en conserva con un amortiguador de acetato que tiene un pH en el intervalo de 3.0 a 5.7 para preparar una composición de frutas amortiguada, el amortiguador de acetato contiene 10-50% en peso de acetato disuelto en la forma de un ácido acético disuelto y anión de acetato disuelto, y; • si es necesario, agregar agua y/o acidulante a la composición de frutas amortiguada para lograr un contenido de agua de al menos 20% en peso y un pH en el intervalo de 3.0 a 4.2. El método de conservación de la presente invención permite la prevención eficaz del deterioro microbiano en las composiciones de frutas sin impactar negativamente las propiedades organolépticas del producto.
