Abstract

Los consumidores hoy en día están buscando ingredientes de alimentos "naturales" para mantenerlos sanos y en forma con todos los alimentos. Un "Inhibidor Microbiano Natural Orgánico" es un ingrediente antimicrobiano orgánico que se sintetiza a partir de la fermentación de materias primas naturales incluyendo harina de arroz, hidrolizado de trigo y licor de maíz fermentado. Una cantidad de 0.1 a 1.5% durante la conservación de diferentes productos alimenticios como pepinillos, ensaladas, bebidas y carnes, etc., mantiene el alimento libre de contaminantes microbianos, incrementa el sabor y la ternura de la carne. Este se produce a través de la cofermentación de Acetobacter aceti y Lactobacillus delbrueckii que se modifican por medio de mejora de la cepa a través de experimentos de optimización del medio. Los ingredientes principales del producto incluyen la combinación de ácidos orgánicos producidos naturalmente como ácidos acético, láctico y propiónico además de otros ácidos en cantidades en trazas en forma líquida y también en forma de polvo. Esos son en combinación responsables de las propiedades antimicrobianas con mejora simultánea del sabor.
