Abstract

La presente invención se refiere a productos alimenticios que contienen aceites vegetales que son sensibles a la oxidación, lo que genera ranciedad y productos alimenticios que no son atractivos para los consumidores. El objetivo de la invención consiste en reducir la oxidación, sin utilizar EDTA. La oxidación se ha reducido mediante el uso de una mezcla de compuestos que pueden obtenerse de fuentes naturales. Esta oxidación reducida de ácidos grasos se ha demostrado en mayonesa con bajo contenido de grasa, aderezo para ensaladas y margarina.
