Abstract

Un método para reducir aflatoxina en un gluten de grano o gluten de maíz, comprendiendo el método las etapas de: (a) preparación de una suspensión de gluten de grano o gluten de maíz; y (b) tratamiento de la suspensión de gluten de grano o gluten de maíz con ozono, en donde la temperatura de suspensión de gluten de grano o gluten de maíz en la etapa (b) es desde aproximadamente 10 a aproximadamente 60°C.
