Abstract

La presente invención es una composición que proporciona opacidad de producto ("turbidez") a bebidas sin que sea necesario el uso de aceite agregado; la bebida comprende una matriz de bebida, una proteína que tiene una estructura terciaria o cuaternaria (tal como WPC 80) que tiene un tamaño de partícula promedio de alrededor de 0.3 a alrededor de 10 µm, y una goma hidrocoloide (tal como una goma gellan) que confiere propiedades tixotrópicas a la matriz de la bebida; también se describe el método para conferir turbidez a una composición de bebida utilizando esta composición.
