Abstract

The invention relates to nanostructured systems as thermal protectors of functional ingredients, which are formed by nanoparticulate systems, wherein said nanoparticles can be nanocapsules or nanospheres. The nanoparticles have an average particle size no greater than 350 nm, and comprise; (a) a polymer as a protective membrane; (b) functional or active ingredients that are included in the core of the nanocapsule for the protection thereof; (c) stabilizing agents; and (d) the use of carrier solutions based on polymers for food purposes.
