Abstract
La presente invención se refiere a una composición de material que comprende un sustituto de grasa de poliolpoliester de ácido graso, caracterizada porque el poliol contiene por lo menos 4 grupos hidroxilo y porque el poliolpoliester contiene por lo menos 4 grupos ácido graso, teniendo cada grupo ácido graso de alrededor de 2 a aproximadamente 24 átomos de carbono, caracterizada porque: a) no más que aproximadamente 0.6 por ciento de los ácidos grasos contienen 3 o más dobles enlaces, no más que aproximadamente 20 por ciento de los ácidos grados contienen 2 o más dobles enlaces y no más de aproximadamente 35 por ciento de los dobles enlaces de ácido graso son dobles enlaces trnas: b) los poliesteres tienen un valor de yodo entre alrededor de 15 y aproximadamente 60; y c) la proporción de contenido de grasa sólida con respecto a estabilidad líquido-sólido es menor que 0.25.
