Abstract
La presente invención se refiere a procedimiento de fabricación de un condimento, en el que se hidrolizan proteínas vegetales con ácido clorhídrico concentrado, se neutraliza el hidrolizado, se separan los primeros insolubles, se le deja reposar y se separan los segundos insolubles caracterizado por el hecho de que despues de la separación de dichos primeros o dichos segundos insolubles, se somete al hidrolizado a una destilación al vapor bajo presión reducida a la vez que se mantiene la densidad del hidrolizado a un valor sensiblemtne constante, de fin de eliminar el dicloro-1-3-propano-2-ol.
