Abstract
The invention relates to nanotechnology for the production of biologically active substances, namely a method for production of an inulin-containing solution from Jerusalem artichoke and to methods for producing inulin, fructose-glucose syrup and fructo-oligosaccharides on base thereof.The method for production of an inulin-containing solution from Jerusalem artichoke comprises washing the Jerusalem artichoke tubers, cutting into chip-shaped slices, drying and grinding thereof, mixing with water to produce a suspension. Then fructosans are extracted from the suspension, after which the pulp is separated by filtration, and the resulting solution is clarified and boiled-down to a content of drying substances of 42…45%. The method for producing inulin provides filtering the boiled-down inulin-containing solution through nanofilters with a retention threshold of 5000 Da, then the resulting filtrate is filtered through nanofilters with a retention threshold of 6000 Da and is separated the inulin-containing solution with a molecular mass of 5000…6000 Da, which subsequently is crystallized. The solutions containing fructo-oligosaccharides with a molecular mass of less than 5000 and more than 6000 Da are used to produce fructo-oligosaccharides. A fructose-glucose syrup is also produced from the boiled-down inulin-containing solution by hydrolysis and evaporation.
