Abstract

The invention relates to the food industry, and particularly, to the pectine preparation process.The summary of the proposed process provides the hydrolisis-extraction of the pectine from the vegetable raw material, extract concentration with production of pectine extract, coagulation and washing of pectine with the ethylic alcohol and following product drying.The process is caracterized in the fact that the pectine coagulation with ethylic alcohol is realised in three stages. At the first stage the alcohol is introduced in the quantity providing its concentration to 17-20 vol. percents in the pectine concentrate having pH 1,8-2,2, after what coagulated product is dispersed. At the second stage the alcohol is introduced in the quantity providing its concentration to 55-58 vol. percents, after what the liquide phase is separated from the coagulate. At the third stage to the obtained coagulate alcohol is added providing the concentration of the obtained coagulate to 63-66 vol. percents with its furser separation from the liquid phase.The achieved technical result consists in increasing the volume mass, and pectine gelling possibility.
