Abstract

Conform invenţiei, într-o cameră a reactorului, care este un subansamblu al unei instalaţii pentru obţinerea produselor alimentare sau a unor componente ale produselor alimentare, produsele biologice în formă recoltată, întregi sau bucăţite, sunt supuse acţiunii câmpurilor electrice pulsative. În urma acţiunii câmpurilor electrice menţionate în membranele celulare ale produselor se formează pori, care se deschid ireversibil, făcând astfel mai accesibil conţinutul celular. Aceasta se realizează prin intermediul unor descărcări electrice între un grup de electrozi care sunt încărcaţi cu tensiune înaltă şi care se află în zona longitudinală peretelui reactorului şi electrozii legaţi la pământ ce sunt situaţi în zona longitudinală opusă, care intersectează materia primă. Fiecare grup de electrozi este conectat la o sursă de tensiune înaltă, de exemplu, la un generator Marx, pentru a crea rapid câmpuri electrice pulsative cu direcţii diferite între electrozii de tensiune înaltă şi electrozii legaţi la pământ.
