Abstract
The invention refers to the food industry, in particular to a process for preparing a fermented nonalcoholic beverage.The process, according to the invention, includes preparation of the must from aqueous extract of germinated cereals, aqueous extract of medicinal plants and berries, sugar and milk leaven, fermentation of the must during 8…10 hours at the temperature of 40…45°C, ageing during 20…24 hours at the temperature of 2…4°C, separation from the sediment and bottling, the must components being taken in the following ratio, mass %:
