Abstract

The invention refers to the dairy industry, namely to an installation for lactic bacteria cultivation.The installation for lactic bacteria cultivation contains a heat-insulated biochemical reactor (1), provided with a cover, a heat exchanging jacket, an agitator, kinematically joined with a reduction gear and an electric motor, installed onto the cover, a thermometer, joined with an automatic device regulating the culture medium temperature, branch pipes for feeding (13) the sowing material and the culture medium into the reactor and for discharging (14) the culture medium therefrom and branch pipes for inlet into the jacket of the steam and cold water and for outlet therefrom of the warm water and condensate (17), at the same time the agitator is made in the form of a framework with blades, which is placed onto the axle of the agitator with the possibility of dismantling and contains a system of porous matrixes for immobilization of the lactic bacteria. The installation contains a device for lactic acid extraction (4), joined with the reactor by means of a recirculating pump (22), a contour (21) and feeding and discharge branch pipes, a device for lactic bacteria separation (7), coupled with a vat for matrix regeneration (8) and a device for agitator transfer with the matrix system (9) from the reactor into the device for lactic bacteria separation or into the vat for matrix regeneration. As matrixes is used a solid capillary-porous substance from organic polymers or minerals of montmorillonite clay type or a semisolid capillary-porous substance from cellulose and gels. The matrixes are made in the form of pastils and globules, the matrixes from semisolid capillary-porous substance are placed into bags permeable for the culture medium.
