Abstract
Inventia se refera la industria alimentara, in special la o compozitie si un procedeu de fabricare a fructelor si pomusoarelor marinate cu proprietati functionale de caracter diabetic. Fructele si pomusoarele marinate cu extract de stevie contin urmatoarele componente, in % de masa: fructe si pomusoare 50...70, compozitie de umplere ce contine condimente, acid acetic si extract apos de stevie 30...50. Procedeul de fabricare a fructelor si pomusoarelor marinate cu extract de stevie include pregatirea fructelor si pomusoarelor, prepararea compozitiei de umplere, ambalarea fructelor si pomusoarelor in recipiente, turnarea compozitiei de umplere, inchiderea si sterilizarea. Pentru pregatirea compozitiei de umplere in apa se adauga condimentele, extractul apos de stevie cu continut masic de glicozide de 1...20% se fierbe 3...5 min, se filtreaza si se adauga acidul acetic. Rezultatul inventiei este obtinerea produsului cu proprietati functionale de caracter diabetic, imbogatit cu aminoacizi, vitamine, polifenoli si elemente minerale. ŕ
