Abstract
The invention relates to a process for obtaining of sodium dihydroxyfumaric acid, used as antioxidant for wine material stabilization.The process includes oxidation of the tartaric acid with hydrogen peroxide in the presence of catalyst - the Mohr's salt and hydroquinone, in the capacity of reducer, with that the concentration of the hydrogen peroxide is of 40%, with the subsequent addition of the aqueous solution of sodium chloride at cooling, in the following ratio, g:
