Abstract

The invention refers to the meat industry, and may be used for headcheese production. The process for headcheese production includes there variants of preparation, namely: on the basis of meat raw material and on the basis of vegetable raw material. The claimed process consists in the size reduction and mixing of the prepared raw material, the subsequent filling up of the membrane with the comminuted raw material and with gelatinizing solution in the amount up 28_32% of the total mass of the finished product, finding and cooling of the headcheese. In the capacity of meat raw material are used meat products of work, beef, chicken or combination thereof. In the capacity of vegetable raw material used pickled corn and blanched vegetables. The meat products are reduced to pieces with dimensiones of 5x5_10x10 mm, or with the length of not more than 50 mm, or with the weight of 10_30 g. The vegetables are reduced to pieces with dimensions of 5x5_10x10 mm.The result of the invention consists in increasing the quality of the headcheese, in reducing the labour input for its production, as well as in accelerating the technological process of the production.Claims: 9
