Abstract
Изобретение относится к пищевой промышленности, в частности к кондитерским изделиям, а именно к способу получения глазированных конфет на основе сухофруктов.Способ, согласно изобретению, включает инспектирование и промывку сушеных слив и/или изюма холодной водой, их бланширование паром в течение 5-10 мин, варку слив, в течение 10-15 мин, в сиропе полученном из воды и сахара взятых в соотношении 1:4 соответственно, сушку слив и/или изюма при температуре 40-60°С до остаточной влажности 20-25%, их измельчение до размера 0,2-0,5 см, отделение шрота грецкого ореха от металлопримесей и его термообработку при температуре 60-65°С в течение 30-35 мин, до влажности 5-6%, просеивание какао-порошка и сахарной пудры, смешивание слив и/или изюма с шротом грецкого ореха, какао-порошком, сахарной пудрой, аскорбиновой кислотой и, по желанию, миндальным ароматизатором, формирование корпуса конфет, покрытие шоколадной глазурью температурой 29-32°С и охлаждение до температуры 4-6°С в течение 5-7 мин, при этом компоненты взяты в следующем соотношении, в масс%:сливы сушеные без косточки0-50изюм50-0шрот грецкого ореха26-30сахарная пудра6-8какао-порошок2-4аскорбиновая кислота0,05-0,1миндальный ароматизатор0-0,1шоколадная глазурьостальное.
