Abstract

L’invention s’inscrit dans le domaine de l’industrie agroalimentaire de l’industrie pharmaceutique et cosmétique. Elle trouve application en industrie agroalimentaire particulièrement dans la production de stabilisants alimentaires extraits à partir des graines de la caroube appelés ‘’locust bean gum’’. L’invention concerne un procédé de décorticage de la graine de caroube par action couplée d’une enzyme et d’ultrasons, conduisant au ramollissement du tégument constituant l’enveloppe de ladite graine. Le détachement du tégument est rendu plus facile avec la préservation de l'intégrité structurelle et fonctionnelle des composés hydrolysés.The invention relates to the field of the food industry, pharmaceutical and cosmetic industry. It finds application in the food industry, particularly in the production of food stabilizers extracted from the seeds of the carob bean called "locust bean gum". The invention relates to a method for dehulling the carob bean by the coupled action of an enzyme and ultrasound, leading to the softening of the seed coat constituting the envelope of said seed. Detachment of the seed coat is made easier with the preservation of the structural and functional integrity of the hydrolyzed compounds.
