본 발명은 햅쌀 및 묵은쌀에 따라 불림 유지 온도 및 유지 시간을 다르게 제어하는 전기밥솥의 운전방법에 관한 것으로서, 특히 쌀이 햅쌀인지 묵은쌀인지를 인지하기 위하여 소비자로 하여금 여름 또는 겨울 모드를 선택하도록 하고 여름 모드가 선택된 경우에는 묵은 쌀, 겨울 모드가 선택된 경우에는 햅쌀로 판단하는 제1단계와, 소비자에 의해 밥의 종류와 취사 모드가 선택되면 임의의 온도까지 급속가열을 하여 쌀에 오염되어 있는 부착균을 사멸 또는 생육을 억제시키는 제2단계와, 여름 모드 또는 겨울 모드에 따라 다르게 설정된 불림 유지 시간과 불림 유지 온도로 불림을 진행하는 제3단계와, 상기 제3단계에서 불림이 끝나면 취사하는 제4단계로 이루어져, 햅쌀일 경우 임의의 온도까지 급속가열을 하여 쌀에 오염되어 있는 부착균을 사멸 또는 생육을 억제하고 햅쌀 및 묵은쌀에 따라 불림 유지 온도 및 유지 시간을 다르게 제어함으로써, 단시간 취반을 해도 쌀의 호화가 되어 밥의 취반상태를 향상시키고, 묵은쌀 즉, 여름철에 먹게되는 쌀에 나타나는 세균등 미생물의 번식으로 보온시 밥의 변질 가속화를 방지하며, 더불어 최적 취반 및 보온 향상을 제공하여 식미 향상을 도모한다.The present invention relates to a method of operating an electric rice cooker that controls soaked holding temperature and holding time differently according to new rice and old rice, and in particular, allows the consumer to select a summer or winter mode to recognize whether the rice is new or old rice.
