본 발명은 녹차잎으로부터 녹차 고유의 색, 향, 풍미 등을 손상없이 추출, 농축하며 제조된 농축액이 고품질의 상품성을 유지하는 방법에 관한 것으로 녹차잎에 50-80%의 알콜을 20-300분 처리한 후 적당량의 에리소르빈산(erythorbic acid)과 싸이클로덱스트린(cyclodextrin)을 녹인 탈이온수로 추출하고 평균입자경 0.1-1.0㎛ 필터로 미세여과 후 역삼투막을 이용하여 15-16°brix까지 농축하고 이 농축물에 탄네이스(tannase)를 0.005-0.05%로 처리하여 가스치환 용기에 저장함을 특징으로 하는 것이다.The present invention relates to a method of extracting and concentrating green tea's inherent color, aroma, and flavor without damaging the green tea leaves and maintaining the high quality commercially available concentrate.
