Abstract
본 발명은 효모가수분해물을 이용한 신규한 배지에 관한 것이다. 좀더 구체적으로, 본 발명은 효모가수분해물을 이용한 유산발효에 사용되는 배지 및 그를 이용한 경제적인 유산의 제조방법에 관한 것이다. 본 발명에서는 유산균 발효배지 성분으로 널리 이용되는 액상 또는 고체상의 효모균체를 최소한의 가수분해처리를 통해 가공하고 이를 유산균 발효에 배지성분으로 이용함으로써, 맥주산업 등에서 그 부산물로 다량 배출되어 대부분이 버려지는 효모균체를 미생물 배지로 이용하여 경제적으로 유산을 제조하는 방법을 제공한다.The present invention relates to a novel medium using yeast hydrolyzate. More specifically, the present invention relates to a medium used for lactic fermentation using yeast hydrolyzate and a method for producing economical lactic acid using the same. In the present invention, the liquid or solid yeast cells widely used as lactic acid bacterium fermentation broth components are processed through minimal hydrolysis treatment and used as a medium component for lactic acid bacteria fermentation, whereby most of them are discharged as by-products in the beer industry and discarded. It provides a method for producing lactic acid economically using yeast cells as a microbial medium.
