본 발명은 효모가수분해물을 이용한 신규한 배지에 관한 것이다. 좀더 구체적으로, 본 발명은 효모가수분해물을 이용한 유산발효에 사용되는 배지 및 그를 이용한 경제적인 유산의 제조방법에 관한 것이다. 본 발명에서는 유산균 발효배지 성분으로 널리 이용되는 액상 또는 고체상의 효모균체를 최소한의 가수분해처리를 통해 가공하고 이를 유산균 발효에 배지성분으로 이용함으로써, 맥주산업 등에서 그 부산물로 다량 배출되어 대부분이 버려지는 효모균체를 미생물 배지로 이용하여 경제적으로 유산을 제조하는 방법을 제공한다.The present invention relates to a novel medium using yeast hydrolyzate.
