제 1,2,3도는 대두유에 락토바실러스 불가리커스(Lactobacaillus bulgaricus), 락토바실러스 액시도필러스(Lactobacaillus acidophilus), 락토바실러스 카세이(Lactobacaillus casei)를 단독으로 배양할 때와 클루이베로 마이세스 후라질리스(Kiuyveromyces fragilis)와 함께 혼합 배양할 때 발효시간에 따른 산도의 변화를 나타낸 곡선이다.
Claims (1)
- 대두유를 젖산균으로 발효시킬 때 효모와 혼합배양하는 것을, 특징으로 하여 균체의 생육과 산의 생성을 촉진시키고 동시에 비소화성 과당류(flatulencefactors)를 분해시키며 대두 특유의 냄새를 제거시키는 것을 특징으로 하는 발효 대두유 제조법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
