Bacteria, cultivating.-Granular cultures of lactic acid bacteria &c. are prepared by inoculating a suitable liquid with aerobic scum-forming lactic-acid bacteria, or with a mixture of neutral aerobic scum-forming bacteria and anaerobic lactic-acid bacteria, or with mixtures of the above bacteria, removing the scum from time to time, dividing, and drying it. For example, separated milk or whey is sterilized, fermented with kephir ferments, separated therefrom, and poured into flat vessels, when the bacillus causasicus forms a scum enclosing other kephir bacteria. Yoghourt bacteria can be similarly cultivated.
