갈근타쇄분에 Asp. niger 배양액 3∼5중량%를 접종시켜서 10∼40시간 발효시키고, 이어서 Coryne bacterium glutamicum 배양액 2∼4중량%를 pH 5.0∼7.0에서 40∼60시간 발효시켜서 갈근발효물을 얻고 이 갈근발효물에 소백분과 전분을 20∼70중량%를 혼합반죽하여 면을 제조하는 방법.Asp.
