An instant squid product with increased nucleic acid and amino acid giving good taste was manufd. Raw, dressed squid was washed in agitated water. Washed and seasoned raw squid was dried at 35≰C to 35-50% moisture content and aged at 20-25≰C for 24 hr. The aged squid was heated under pressure at 150-200≰C for 3 min to give 27-35% moisture content product.
