상기 실시예 1에서 제조된 꽃게 유래 저분자 펩타이드를 함유하는 조성물과 비교예 1 내지 3에서 제조된 피로회복용 조성물에 대하여 관능검사를 실시하여 비교하였다. 관능검사는 기능성식품을 주로 섭취하는 대상자를 고려하여 남녀 성별 구분없이 50~70대 성인 및 노인을 대상으로 총 40명을 선발하였으며, 물 100㎖에 상기 실시예 1에서 제조한 꽃게 유래 저분자 펩타이드를 함유하는 조성물 10g을 혼합하여 섭취하게 하였고, 물 100㎖에 상기 비교예 1에서 제조한 피로회복증진용 조성물 10g을 혼합하여 섭취하게 하였고, 비교예 2의 피로회복용 조성물 100㎖을 섭취하게 하였고, 비교예 3의 피로회복용 조성물 100㎖을 섭취하게 하였으며, 냄새, 맛, 색상 및 전체적 기호도 평가를 10점 척도법을 이용하여 실시하였으며, 그 결과를 평균하여 표 1에 나타내었다.
