Abstract

PURPOSE: A process for preparing green tea noodles and comfrey leaf noodles is provided to produce various noodle products by adding green tea and comfrey concentrate solution obtained by mixing them in water and heating the mixture to common materials such as wheat flour, sweet potato powder, corn flour, salt, alcohol, sour material, cold soda or the like. CONSTITUTION: The process comprises steps of drying the green tea and the comfrey leaves and grinding them into fine powders; blending the powders in water then heating the blend; stopping heating the blend immediately after boiling the water then cooling the heated blend; entering the blend into a pouch and squeezing water from the pouch to extract most of components from the green tea and the comfrey leaves; again heating the extract to obtain a concentrate; and finally blending the concentrate into the wheat flour, sweet potato powder, corn flour, salt, sour material, cold soda or the like. The obtained product may be knife-cut noodles, Woodong noodles, plain noodles, Chinese noodles, cold noodles, tough cold noodles, fried noodles, flakes or the like made of the green tea and/or the comfrey leaves concentrate.
