상기 실시예 1의 동치미를 블렌더에 갈아서 오리고기 숙성을 위한 퓨레를 제조하였다. 밀폐 용기에 익히지 않은 손질된 통오리를 넣고, 섭씨 2도씨에서 30 시간 숙성하여 숙성된 오리고기를 제조하였다. 이후, 숙성된 오리고기를 가열용기에 넣고, 황기 100 중량부, 상기 황기 100 중량부를 기준으로 당귀 15 중량부, 천궁 3 중량부, 도라지 7 중량부 및 감초 5 중량부가 혼합된 혼합약재와 숙성된 오리고기가 완전히 잠길 정도의 정제수를 넣고, 15 분간 삶아 삶은 오리고기를 제조하였고, 오리를 삶은 국물 중 상층에 떠있는 기름을 모두 제거하여 오리고기 육수를 제조하였다. 마지막으로 압력솥에 삶은 오리고기, 오리고기 육수 및 찹쌀 100 중량부, 상기 찹쌀 100 중량부를 기준으로 녹두 50 중량부, 해바라기씨 5 중량부, 호박씨 3 중량부, 은행 2 중량부, 대추 2 중량부, 마늘 2 중량부 및 단호박 10 중량부의 비율로 포함된 죽 재료를 넣고 15분간 중불로 가열하고, 6-7분간 약불로 가열하여 실시예 3의 오리백숙을 완성하였다. 비교예 3의 오리백숙은 실시예 1의 동치미 대신 비교예 1의 동치미를 사용한 퓨레를 사용하여 제조하였다.The dongchimi of Example 1 was ground in a blender to prepare a puree for ripening duck meat. 제조예 1의 방법으로 제조한 동치미의 발포력을 측정하였다. 발포력 평가는 푸른초장 오리와 메밀에 근무하고 있는 임직원 10명을 선발하여 실험을 진행하였다. 발포력에 있어서 결과 수치는 포도당과 효모를 모두 첨가하지 않은 비고예 1의 발포력을 기준 1로 하여 상대적인 세기를 1에서 5까지(세기에 따라 5(매우강함), 4(강함), 3(보통), 2(약함), 1(없음))로 하여 표기하게 하였다. 10 명이 측정한 실시예 1 동치미의 발포력은 2.9 정도로 비교예 1 동치미의 발포력보다 현저히 우수하였다.The foaming power of Dongchimi prepared by the method of Preparation Example 1 was measured. 기호 평가에서는 상기 제조예의 방법으로 제조한 동치미, 막국수 및 오리백숙의 풍미와 후각적 기호를 조사하였으며, 푸른초장 오리와 메밀에 근무하는 임직원 및 지인 30명을 선정하여 해당 인원을 대상으로 하여 실시하였다. 동치미, 막국수 및 오리백숙은 서울시 서대문에 위치하는 푸른초장 오리와 메밀에서 세트메뉴 형식으로 판매하는 상품이기 때문에 각각의 음식을 모두 한번에 시식하여 평가하였다. 상기 실시예 1 내지 실시예 3 및 비교예 1 내지 비교예 3의 방법으로 제조한 동치미, 막국수 및 오리백숙을 그 대상으로 하며, 시식 후 1에서 10까지 10단계로 제조방법 별 처리구의 기호성을 평가하여 기록하게 하였다. 시식 시에는 실시예 1 내지 실시예 3 및 비교예 1 내지 비교예 3의 방법으로 제조한 동치미, 막국수 및 오리백숙을 제공하였다. 기호성은 풍미와 후각적 특성 두 가지 요소로 분리하여 시식 및 기록하였다.In the preference evaluation, the flavor and olfactory preference of Dongchimi, Makguksu, and Boiled Duck prepared by the method of the above production example were investigated, and 30 employees and acquaintances working at Blue Pasture Duck and Buckwheat were selected and conducted on those people. . 상기 단계 (d)의 효모는 와인 제조용 효모인 EC1118이고, 상기 동치미 10 kg을 기준으로 1-5 g 포함되며,
상기 단계 (d)의 포도당은 상기 동치미 10 kg을 기준으로 150-250 g 포함되고,
상기 단계 (2)의 혼합 추출물은 상기 무 100 중량부를 기준으로 양파 20-40 중량부, 노가리 20-40 중량부, 마늘 5-10 중량부, 생강 1-5 중량부, 오징어 10-20 중량부를 포함하며,
상기 단계 (2)의 막국수 육수는 상기 동치미 및 상기 혼합 추출물을 중량기준 1 : 3-4의 비율로 포함하고,
상기 단계 (3)의 막국수는 상기 막국수 육수와 상기 삶은 막국수 면 이외에 오이채, 무채, 김 가루 및 참깨 가루를 추가로 포함하는 것을 특징으로 하는 막국수 제조방법.
