이 발명에 따른 석류 주스의 지방 분해 효과를 확인하기 위하여 석류 주스(실시예 1~4, 비교예 1~4)을 준비하고, 복부 둘레 감소 확인 실험을 수행하였다. 상기 결과와 같이, 모든 그룹에서 체지방이 감소하였으나, 그 중 실시예 1~4에서 체지방 감소율이 가장 높게 측정되었다. 석류 주스 대신 증류수를 마신 비교예 1의 경우, 실시예 보다는 적은 비율로 체지방 감소 효과를 나타내었다. 반면에, 실시예 보다 엘라그산의 함량이 적은 비교예 2와 비교예 3의 경우 증류수를 마신 비교예 1 그룹보다 체지방 감소율이 적었으며 이는 석류 주스 자체 칼로리로 인한 영향으로 판단된다. 스팀 처리 시간이 가장 긴 비교예 4의 경우 비교예 1 보다 체지방 감소율은 높았지만 쓴맛이 느껴져 음용이 어려웠다는 평가를 받았다. 따라서 이 발명의 스팀 처리 조건으로 제조한 석류 주스는 음용이 용이하고 지방 분해 효과를 나타낸다.As shown in the above results, body fat decreased in all groups, but among them, Examples 1 to 4 showed the highest body fat reduction rate. 석류를 세척하는 과정; 상기 세척된 석류의 과육만 수득하는 과정; 석류 과육을 2회 스팀 처리하는 과정; 상기 스팀처리가 완료되면 초음파로 처리하는 과정; 상기 석류 과육을 이축 스크류가 구비된 착즙기를 이용하여 착즙하는 과정; 상기 착즙하는 단계에서 발생하는 고형분 100g당 pH 2~10의 용매 300mL를 가하여 2~4시간 동안 추출하는 과정; 상기 추출이 완료되면 감압 여과하여 불용분을 수득하는 과정; 상기 불용분을 레몬 추출물에 침지하여 중화하는 과정; 상기 중화된 불용분을 증류수로 세척하는 과정; 상기 세척된 불용분을 건조하는 과정; 상기 건조된 불용분을 380~400mesh 입자크기로 분쇄하는 과정;을 포함하고,
상기 착즙하는 과정에서 착즙한 착즙액과 분쇄된 불용분을 혼합하여 석류 주스를 제조하는 과정, 발색 안정화를 위하여, 펙틴리아제 (Pectin lyase), 펙티나아제 (Pectinase), 글루코아밀레이즈 (Glucoamylase) 중 적어도 한가지 이상을 상기 석류 주스와 혼합하여 버퍼 탱크에서 20~30℃ 온도로 30분~1시간 동안 효소 처리하는 과정을 거쳐서 제조되며.
