본 발명은 한국산 달맞이꽃 종자유의 생산 방법에 관한 것으로, 더욱 상세하게는 한국산 달맞이꽃 종자를 원료로 기름을 짜는 과정에서 산화 방지를 위하여 참기름을 첨가하여 제조하는 방법에 관한 것이다.
달맞이꽃 종자유는 7~14%의 리놀렌산(linolenic acid)을 함유하여 자동 산화가 매우 크고, 특히 달맞이꽃 종자유의 효능을 나타나게 하는 주요 성분인 감마-리놀렌산은 이성화, 중합화 및 기타의 화학적 성분 변화가 쉽게 일어날 수 있다. 그러므로 이의 방지를 위해 지금까지는 일반적으로 달맞이꽃 종자유의 저장을 위하여 산화방지제로 0.1%의 알파토코페롤을 첨가하여 사용하여 왔는데, 이는 1981년의 미국 특허에 의한 것이다.

제품의 실질적인 제조를 위해 지금까지는 일반적으로 달맞이꽃 종자유의 저장을 위하여 산화방지제로 사용해 온 알파토코페롤에 대해 조사하던 중에 새로운 사실을 알게 되었다. 알파토코페롤은 지방산의 불포화도가 증가하면 많은 양의 과산화물을 형성하는 것으로 나타나 그 항산화성에 대해 여러 학자들에 의해 논란이 되어 왔다. 1990년도에 서울대학교 임웅규 교수님 등이 한국식품과학회지에 발표한 논문에서도 달맞이꽃 종자유의 산화안정성에 대한 토코페롤의 첨가 효과는 미미한 것으로 나타났다. 특히 현재 시판되는 제품들에 들어 있는 알파토코페롤의 경우는 첨가농도에 비례하여 모든 측정치에서 무첨가군에 비해 가속적인 산화촉진 작용을 나타냈으며, 델타토코페롤은 무첨가군에 비해 약간의 항산화효과가 저장 초기에 첨가 농도에 비례하여 나타났으나 저장일이 경과됨에 따라 그 효과는 저하되는 경향이었다.
본 발명은 상기와 같은 문제점을 해소하기 위해 여러가지 항산화 물질들을 대상으로 연구하고 고민하던 중에 우리 가정에서 쉽게 접할 수 있는 참기름은 상온에 오래 두어도 상하거나 변하지 않는다는 아이디어가 떠올랐다. 그래서 참기름에 대해 조사해 보니 기름이 변질되는 것(산패), 즉 기름의 산화(산소와 결합하여 본래와 성질을 잃어버리는 것)를 막아주는 비타민E와 세사몰(참깨에만 있는 산화 방지 성분)을 함유하고 있으며 이런 참기름의 항산화 성분은 기름을 덜 정제할수록 더 많이 남아 있다는 사실을 알게 되었다. 재래식 참기름의 경우 기름병 밑바닥에 가라앉은 물질이 있는데, 여기에는 기름의 변질을 막는 물질은 물론 각종 영양소, 섬유질, 단백질, 미네랄 등이 모여 있다.
이러한 사실에 착안하여 필수지방산공급, 콜레스테롤 개선, 혈행 원활, 생리활성물질함유 등의 특성이 알려져 있고, 상처, 발진, 종기 등에 외용으로 사용하며, 천식이나 폐결핵의 기침 경감, 진통제, 경련성 발작 경감 등을 위해 내복하는 달맞이꽃 종자유의 효능을 나타나게 하는 감마-리놀렌산을 포함하는 주요 성분들이 산화에 의해 변하지 않도록 하기 위해 최적의 제조 방법을 확립하고자 하였다.

In the present invention, while studying and contemplating various antioxidants to solve the above problems, the idea that sesame oil, which can be easily encountered in our homes, does not go bad or change even at room temperature for a long time. So, after investigating sesame oil, it contains vitamin E and sesamol (an antioxidant ingredient only in sesame) that prevent oil from deteriorating (ie rancidity), that is, oxidation of oil (which loses its original and properties in combination with oxygen). I found that the more antioxidants in sesame oil, the less oil I refine. In the case of conventional sesame oil, there is a substance that sinks to the bottom of the oil bottle, which contains various substances such as nutrients, fibers, proteins, and minerals, as well as substances that prevent oil from deteriorating.
With these facts in mind, it is known to supply essential fatty acids, improve cholesterol, smoothly circulate, and contain physiologically active substances, and use them for external use in wounds, rashes, and boils. 상기한 목적을 달성하기 위해, 본 발명에 따른 실험 방법은 다음과 같다. 실제의 제조는 수분을 날려 보내기 위해 달맞이꽃 종자를 30초~5분 정도 볶은 후 압착하여 기름을 짜는 단계, 산화방지를 위하여 신속하게 참기름을 0.1중량% 첨가하여 혼합하는 단계, 상기 혼합후 차광 밀폐 용기에 포장하는 단계로 이루어지는데 첨가물에 의한 달맞이꽃 종자유의 산화안정성에 대해 비교해 보기 위해 다음 실시예와 같이 실험하여 비교하였다.
< 실시예 1 >
출원인 본인이 충북 괴산군 도안면에서 직접 재배한 달맞이꽃으로부터 수확한 종자들을 30초~5분 정도 볶은 후 압착하여 기름을 짜고 무첨가 상태로 저장 시간이 경과 함에 따라 산화되는 정도를 알아보기 위해 과산화물가를 측정하였으며 그 결과는 [도 1] 에 나타냈다. 과산화물가는 다음과 같은 방법으로 측정하였다. 첫째, 유지 1g 정도를 250mL 삼각플라스크에 취한다. 둘째, 클로로포름-아세트산 용액(클로로포름과 아세트산을 2:3의 부피비로 혼합한 용액) 35mL를 가하고 포화 KI 용액(증류수에 KI를 침전이 생길 때까지 녹인 용액으로 실험전에 새로 만들어 갈색병에 보관) 1mL를 가한다. 세째, 1분간 진탕시키고 어두운 곳에 놓아둔다. 넷째, 증류수 75mL를 가하고 1% 전분 용액 1mL를 가한다. 다섯째, 0.01N Na2S2O3로 보라색이던 용액이 무색이 될 때까지 적정하고 아래 식에 따라 계산한다.
