Claims (5)
- 발효유의 제조에 있어서, 발효유내에 ACE 저해활성이 있는 펩타이드를 생성시키기 위하여 우유에 단백분해효소(Protease)를 가하고 발효시키는 것을 특징으로 하는 ACE 저해효과가 있는 발효유의 제조방법.[여기서, 상기 단백분해효소는 아스퍼질러스 오리제(Aspergillus oryzae)의 단백분해효소, 바실러스 스테아로써 스테아로써모필러스(Bacillus stearothermophillus)의 단백분해효소, 파파인(Papain), 트립신(Trypsin), 펩신(Pepsin) 또는 이들의 혼합물로 이루어진 그룹로부터 선택됨].
- 제 1항에 있어서, 상기 단백분해효소는 우유에 포함되어 있는 유단백질에 대해 그램당 0.001∼2㎎ 가해지는 것을 특징으로 하는 제조방법.
- 제 1항에 있어서, 상기 발효유는 호상의 발효유임을 특징으로 하는 제조방법.
- 제 1항에 있어서, 상기 발효유는 드링크 형태의 발효유임을 특징으로 하는 제조방법.
- 제 1항의 제조방법에 의해 제조되는 것을 특징으로 하는 ACE 저해효과가 있는 발효유.
