Abstract

PURPOSE:To synthesis triglycerides in high yield by allowing a specific immobilized lipase in less than 200ppm concentration in water to act on fatty acids, monoglycerides and/or diglycerides. CONSTITUTION:Lipase is immobilized on a porous support which has macropores of more than 600Angstrom average pore diameter by the physical adsorption method to prepare an immobilized lipase. The immobilized lipase is allowed to act on in a concentration of less than 200ppm in water to give triglycerides from fatty acids, monoglycerides and/or diglycerides. The enzyme used in the invention originates from, for example, Rhizopus or Aspergillus. The support is, for example, zeolite or silica of 600-500,000Angstrom average pore diameter.
