Abstract

PURPOSE:To suppress bitterness and sweetness eliminating action and to improve taste of extract obtained from leaves of Gymnema sylvestre, having specific actions of leaves, by subjecting the extract to removal treatment of bitter and sweet components. CONSTITUTION:Raw leaves of Gymnema sylvestre belonging to the family Asclepiadaceae native in India are air-dried at normal temperature for about 7 days and the dried leaves are fed to a roaster and roasted to give coarse tea. The coarse tea is immersed in hot water at about 90 deg.C to prepare a tea solution, which is concentrated. Then the concentration solution is freeze-dried to give an extract. Then the extract is subjected to reversed phase column for high performance liquid chromatography to partially collect a fraction component eluted with about 40% methanol. Then the fraction is freeze-dried to give a low-calorie food additive. Consequently, the additive has both inhibitory action on rise of blood sugar value and cariostatic action and will not change the taste of foods and drinks because of weak action on elimination of sweetness and low bitterness. Therefore, the additive is added to a food such as glucide or starch to give great welfare.
