ータ等の加熱部材(図示せず)とこの加熱部材の
温度を40℃前後に制御するサーモスタツト等の温
度制御部材(図示せず)が内蔵せしめられてお
り、側壁に取り付けられたスイツチ13を入力す
ると、加熱部材からの熱は受皿12に伝達されて
受皿12を加熱するようになつている。そして、
この加熱は框体11の側壁に取り付けられたタイ
マー14によつても加熱時間が制御されるように
なつており、タイマー14を所定の時間にセツト
することで所定時間経過後はスイツチが自動的に
切られるようになつている。前記皿2は、このよ
うに形成された本体1と略同形状に形成されて受
皿12上に着脱可能に載置され、受皿12からの
熱によつて同程度に加熱されるようになつてい
る。この皿2は中央部が低くなつた窪み部21と
該窪み部21周りに形成された周縁部22とから
形成されており、窪み部21上面に蒸された大豆
等が載置されるようになつている。そして、周縁
部22は第3図及び第4図に示すように波形状の
凹凸が皿の中心に向かつて複数条形成されてお
り、カバー3が皿2上に載置された場合には、凹
条23によつて空気流通用の開口部が形成せしめ
られるようになつている。又、周縁部22のやや
内側にはリング状の突縁24が形成されて、発酵
によつてカバー3に結露し、カバー3を伝つて流
下する水を塞止め、大豆内に混入するのを防止し
ている。前記カバー3はこのような皿2上に載置
されるが、下端部は皿2の周縁部22上に当接し
て、前述のように皿2とカバー3との空間部が空
気が流通するようになつている。このカバー3は
透明なプラスチツク又はガラスで形成され、外部
から発酵状態が監視できるようになつており、よ
り好ましくは結露水が大豆上に滴下しないでカバ
ー3を伝つて流れ落ちるように逆U字形あるいは
