Abstract

PURPOSE:To enable cooling processing with tasty texture similar to that of ordinary 'TEMPURA' (Japanese deep-fried food), by treating 'TEMPURA' materials having coating with hot water, hot steam or roasting under specific condition and freezing the resultant materials. CONSTITUTION:Any materials, such as fishes, shellfishes or vegetables, which can be processed into 'TEMPURA' may be used. Coatings are suitably prepared by using wheat flour as a main raw material. The coatings are applied to the materials and preferably boiled or steamed in hot water at 90-100 deg.C for 40-60sec. Steaming is preferably carried out at 85 deg.C under 2.5atm. for 15min. In both cases, the materials are dipped in cold water at 2-3 deg.C after heating. The heating and cooling operation may be performed once, but preferably repeated twice. After cooling, the resultant materials are frozen at -20--30 deg.C to provide frozen materials. In the case of chilled products, refrigeration is carried out at <=10 deg.C in a cooling part.
