Abstract
PURPOSE:To efficiently produce hydroxyl unsaturated fatty acid such as ricinoleic acid, by cultivating a specific bacterium belonging to the genus Bacillus in a medium containing an unsaturated fatty acid as a substrate. CONSTITUTION:Bacillus pumilus TKS-0730 (FERM BP-1414), IFO 12089, 12110 or 12097 is aerobically cultivated in a medium containing an organic substance, an inorganic substance, water and 0.5% oleic acid at pH 7-9 at 30-40 deg.C, oleic acid is added to the medium by dripping a fixed amount of oleic acid after a fixed time, 2.5%, preferably 1% total amount of oleic acid is used and the culture is continued to give a culture solution. The culture solution is treated with active carbon or ion exchange resin and extracted by using ethyl acetate adjusted to pH 2.0 with hydrochloric acid to give ricinoleic acid.
