Abstract

PURPOSE:To obtain the titled high-purity soybean protein suitable as a meatlike food, etc., by converting defatted soybean into tissues, extracting saccharides with an aqueous solution of an acid, alkali, etc., separating solid from liquid and then drying the resultant solid. CONSTITUTION:Defatted soybeans 1 after removing fats and oils from soybeans are fed to an extruder processing step 2 and subjected to denaturation and tissue formation treatment.
