Abstract

PURPOSE:To prepare a natural corn flavor having high titer of flavor and excellently balanced quality in high extraction efficiency, by heat-treating corn as a pretreatment and extracting the produced flavor with liquefied carbon dioxide gas. CONSTITUTION:Roughly crushed corn or cob of sweet corn or their squeezed juice or extracted liquid is heat-treated at 90-140 deg.C for 1-200min, preferably at about 110-130 deg.C for about 1-40min. The heat-treated product is put into a pressure vessel, added with liquefied carbon dioxide gas and maintained under a pressure of 6.0-7.0MPa for 3-12hr to extract the corn flavor with carbon dioxide.
