Abstract
PURPOSE:To obtain a nonoxidizable germ-free food without alcoholic smell, by placing a food coated with an alcohol in a wrapping bag, heating the food before sealing the bag and simultaneously evacuating the interior of the wrapping bag. CONSTITUTION:The whole surface of a food is coated (or sprayed) with an alcohol or alcoholic pharmaceutical consisting essentially thereof and the food is then placed in a wrapping bag. The food is heated at a temperature above the boiling point of the alcoholic pharmaceutical in an unsealed state and simultaneously evacuated. Thereby the alcohol is volatilized and air is simultaneously pushed from the interior of the wrapping bag. The opening part of the wrapping bag is then directly sealed. Alternatively, an inert gas is introduced into the wrapping bag, which is subsequently sealed.
