この発明は、豆腐製造における凝固剤の注入方法に関す

(従来の技術)
従来、豆腐の製造方法は、生大豆、水浸大豆、粉大豆等
を計量し、適量の水を加えつつ粉砕機等で磨砕して出来
た豆汁を敷釜の中へ送入し、これに蒸気を噴射して煮沸
し、繊維(オカラ)と豆乳とに分離し、豆乳に苦汁(凝
固剤)を添加して製型箱に入れ硬化後製品とするもので
ある。しかし、苦汁を豆乳に均一に素早く入れ掻き混ぜ
る作業が、従来は片手で撹拌棒を持ち、他方で苦汁の容
器を持ち撹拌棒で豆乳を撹拌しながら苦汁を入れるため
、苦汁が均一に入り難<、製品の均一性に欠けるという

そこでこの考案は、上記の欠点を除去し、従来の方法を
改良し、凝固剤を均等に豆乳内に噴出させることにより
、安定した製品を供給出来、又、その作業も簡単な豆腐
