発明者らは、この強靭なキチン質構造を高圧加熱破砕を
もって処理したことによって、従来、水に不溶な高分子
なamm溝構造もった多糖体が、変性分解されたことに
より、低分子化されると共に、その繊維質問に含まれて
いた物質の、水に対する溶解性が高められたことにより
、さらに、セルラーゼの反応も容易に進み、その結果は
、収量の増加、さらに得られた抽出物中の糖類含量の増
加、色素成分含量の増加へと、導かれたものと考えてい
る。
