本発明は、パン製造機に関するもので、ヒータ
ーを取り付けた加熱槽の内側に挿脱可能に収納さ
れたこね羽根付きパン型内で、前記こね羽根を断
続回転することによりガス抜きを行なおうとする

の後一定時間放置することにより生地の発酵を行
なう(一次発酵)。その後、モータ9によりこね
羽根2を断続的に短時間回転させて、生地中のガ
ス抜きを行なう。すなわち、発酵膨張した生地
を、最初こね羽根2を短時間回転させることで下
部に空隙を作り、さらに一定時間回転を休止して
その間に生地を自重により陥没させ、こね羽根2
に生地が密着した時点で再び回転させる。この操
作を適宜繰り返し、生地のガスが抜けて一塊にな
