無水無機酸、無水無機塩またはそれらの混合物を加えた
ところ、酵素安定性が飛躍的に向上し、40℃、75%
(湿度)の条件で2力月間はほぼ安定に酵素活性かたも
たれることを見出した。このような安定化作用は、これ
らの酵素安定剤がグリセリン中に含まれる反応性の水を
結晶性の非反応性の水とすることによるものと考えられ
