Abstract

いたときは清掃も容易でないなどの問題があった。

を成形凝固させる一次加熱過程と、成形凝固させた材料
を更に高温で加熱する二次加熱工程とに分けて比較的温
度が低く圧力も低くて済む一次加熱過程は成形管内で行
い、高温を要する二次加熱過程は成形管を用いないでコ
ンベヤ上にて行うことにより製品の損傷、空洞形成によ
る品質低下を効果的に抑制し得ることは勿論、成形管の
寸法を短縮化して異形パイプを用いる場合にも低圧力で
の圧送が可能であり、また−次加熱手段として用いられ
るマイクロ波出力を大きくすることによって一次加熱時
間を短縮し、全体の生産能率の向上を図れるようにした
練り製品の製造方法及びその装置を提供するにある。

もが基準温度よりも若干高くなっているから成形器2に
配した可変マグネトロンの出力を調整し、或いはポンプ
出力を調節して練肉素材の移動速度を調整することによ
って各温度を低下させるのが望ましい。

次加熱は、成形管内を通しつつこれをマイクロ波加熱に
てゲル化開始温度以上に加熱し、また二次加熱は成形管
を用いないで大気圧下で二次加熱温度にまで加熱するこ
ととしているから、練肉素材を形崩れしない程度に迄加
熱成形出来、しかも内に含まれる気泡が膨張してもその
まま外部に排出することが出来て、製品中に気泡による
空洞が形成され、また気泡の破裂によって製品が損傷を
受けることもなく、更に成形管自体は短くて済むためポ
ンプの圧力も小さくてよく、成形管として異形管を用い
ても〆n掃が容易であり、更に、−次加熱過程でのマイ
クロ波出力を高めることによって加熱時間を短縮出来て
、製造能率が大幅に向上するなど本発明は優れた効果を
奏するものである。

ら送出される練肉素材を導入する異形断面の成形管及び
この成形管内に導入された練肉素材をゲル化開始温度以
上の温度に加熱するマグネトロンを備えた成形器と、該
成形器から成形されて連続して送出される材料を移送す
るベルトコンベヤ及び該ベルトコンベヤ上を移送される
材料をより高温に加熱する加熱手段を備えた二次加熱器
とを有することを特徴とする練り製品の製造装置。
