このグルテン形成作業は小麦粉に水を加えて麺棒で練る
という伝統的な手打ちによって行なわれていた。しかし
手打ちによっている限りその処理量にも限界があり、ま
た作業者の熟練度により製品の品質に微妙な差異が生ず
ることは否めなかった。また近年この作業を自動的に行
なう装置が開発されてはいるが、これらによって得られ
る製品は手打ちのものに比べると未だ食味の点で見劣り
するのが現状であった。

そこで本発明者はかかる諸欠点を解消するために、さき
にベルトコンベアーの上方両側に、このコンベアーと並
行に回転カムを配設するとともに、前記コンベアーの上
方に、このコンベアーの進行方向と略直交する回転軸を
有する転圧ローラーを前記回転カムにより上下動自在に
支承せしめて自動的かつ均質の麺帯にグルテンを発生せ
しめるようにした麺製造装置を開発(実公昭57一60
701号公報参照)したのであったが、これによると転
圧ローラーの重量が過大であること、及びこれによって
過度の転圧をしてしまっているために、折角発生したグ
ルテンが破壊されてしまい、弾力性のある麺にならない
ことが判った。またベルトコンベアーの上方に、ベルト
面と略垂直に対向するようにシリンダーを配設するとと
もに、このシリンダーのピストンロッドの先端に転圧器
を配設してシリンダーの運動によって転圧器をFl、降
させて断続的に麺帯を転圧し麺帯中のグルテンの発生を
促進せしめるようにした@製造装置も開発(実公昭58
−23251号公報参照)したのであったが、これによ
るとグルテンが発生することは認められるが、その量が
少なく、弾力性が十分に得られないという問題のあるこ
とも判った。

に連結されている。5はこのエアーシリンダー3のシリ
ンダーロッドであり、ピストンロッド5の先端には転圧
器6が設けである。この転圧器6は3本のローラー7を
並行に配設したものを示しであるが、このものに限られ
るものではなく、:52図に示すようにそり状のもの6
′及びその底面に凹凸を形成した形状の転圧器6″また
はこれらに代えて回転自在のローラーの外周面に凹凸を
設けた転圧器6″′等種々のものがある。ローラー状の
転圧W6.6″′を用いる場合には、エアーシリンダー
3の作動時間隔を適当に調整すれば麺帯Mはローラーの
効果によって打ち延ばされ、その後ローラーの回転によ
って押し延ばされることになるグルテンの発生を促進さ
せる上で効果的である。またそり状の転圧器6′、6″
を用いる場合も、エアーシリンダー3の作動時間隔を適
当にHJ整すれば、転圧器6′、6″の効果によって麺
帯Mを打ち延ばし、そのままの状態で転圧器を静止させ
て転圧器6′、6″と接触している麺帯Mの進行を阻止
して転圧器6′、6″の直前において麺帯Mに盛り上り
部を形成し、つぎに転圧器を上昇させたのち再び降下さ
せ、この盛り上り部を押し潰すことによって麺;i?M
を圧延しグルテンの発生を効果的に促進することが可濠
である。但しこの場合転圧器と麺帯Mの接触時間を長く
とりすぎると麺帯Mが切断されるおそれがあるので作動
時間隔はこの点に留意して設定する必要がある。したが
ってこの危険を避けるためには、転圧器6′、6″を下
降せしめて麺帯Mを圧延せしめている時間は、ベルトコ
ンベアー1の作動を停止せしめるようにしてもよい、こ
れはタイマーを使用することにより実現できるのである
。すなわちエアーシリンダー3とベルトコンベアー1の
作動を同期せしめれば、ベルトコンベアー1を間歇的に
進行させることができるのである。尚、上記した実施例
においてエアーシリンダー3を気圧のものとしたが、こ
れに限ることなく油圧でもよいことは勿論である。8は
ベルトコンベアーの上方両側に設けた軸受は板である。
