Description

【発明の詳細な説明】 本発明は、製品としての海苔(乾海苔)の塩分
を適正で略均一な数値にするようにした海苔混合
物の塩分調整方法に関するものである。

海苔の加工過程において塩抜きが不完全である
と、乾海苔の保管中に湿気を呼びやすく、赤紫色
に変質して色調が悪くなつたり、ムレが発生して
表面のつやとかその香りがなくなると共に、焼色
が出にくくなること、とくにチヂミが発生しその
商品価値を著しく低下せしめることになる。そこ
で前述の加工過程で極力塩分を除去するように工
夫しているが、海苔原藻に含まれる塩分の量は養
殖漁場や、水温、潮流、風波等海況の自然環境と
の関係により区々であることからなかなかその調
整がむつかしいこと、及び従来は一般に生産者の
カンにたよる人為的な塩分調整であるがため、必
ずしもその塩分が一定せず品質の安定性が確保さ
れていなかつた。それが為に近時実行昭59−54号
公報で、海苔のくもり防止装置が提案されてい
る。しかしこの考案の唯一の問題点は、調合タン
クでの塩分濃度検出と、それに対応する洗滌機で
の処理であるから、調合タンクでの塩分濃度が所
定の数値でないものでもポンプを介して抄機へ一
時的に供給することになり、必ずしも品質の安定
性が確保されないことにある。

海苔抄機に供給することができる海苔混合物の塩
分調整方法を提供することにある。

以下、本発明の一実施例を図面に基づいて具体
的に説明する。

洗浄機(図示せず)、混成機(図示せず)から
熟成機(図示せず)を経て水と海苔原料とが調合
機1に供給され、ついでこの水と海苔原料とが適
度に混合されこの調合機1を介して濃度調整槽2
へ供給される。この濃度調整槽2に供給された水
と海苔原料との混合物は、本出願人等が提案して
いる特公昭56−50824号、特公昭56−50951号等の
濃度制御方法で、その海苔濃度を設定値に維持す
るように構成するか、若しくは第2図に示すよう
に例えば濃度調整槽2に海苔濃度センサー3を介
して調整する。即ち図示のように海苔濃度センサ
ー3の濃度検出値が設定値以下のときは、その濃
度調整槽2の水を排水ポンプ4を介して排水槽5
に排水する。一方設定値以上のときは、給水ポン
プ6を介して排水槽5の水を濃度調整槽2に給水
し、海苔濃度を一定に維持するように構成されて
いる。尚好ましくは濃度調整槽2への海苔原料は
比較的よく洗浄等され、塩分の少い海苔原料がよ
い。そしてこの状況において混合物は例えば濃度
調整槽2に設けた塩分検出センサー8でその値が
検出される。そしてその検出値がこの濃度調整槽
2で定める設定値以下であるときは、塩分検出セ
ンサー8を介して海水ポンプ9を作動して、海水
10を供給すると同時に、濃度調整槽2の水を排
水ポンプ12を介して排水し、もつてこの濃度調
整槽2の水を海水10と置換して塩分濃度を設定
値に維持する。そうしてこの混合物をより撹拌し
て海苔原料と水との混合状態を生成し、例えば供
給ポンプ13を介して適正塩分と濃度に調整され
た混合物を海苔抄機14に供給する。一方その検
出値がこの濃度調整槽2で定める設定値以上であ
るときは、塩分検出センサー8を介して清水ポン
プ15を作動して、清水16を供給すると同時
に、濃度調整槽2の水を排水ポンプ12を介して
排水し、もつてこの濃度調整槽2の水を清水16
と置換して塩分濃度を設定値に維持する。そうし
てこの混合物より撹拌して前述と同様に海苔抄機
14に供給するのである。尚図示しないが塩分検
出センサー8、海苔濃度センサー3を濃度調整槽
2と海苔抄機14との間に設けたホースに設ける
ことも可能である。

て、理想とする塩分量の乾海苔を能率よく製造で
きるし、適度の苦味成分のある良質の乾海苔が皆
造できる。とくに本発明では、海水と置換する方
法であるので、混合物の塩分濃度の微調整が可能
となり、脱塩効果の均一化と効率化が達成され、
天然の苦味を乾海苔に付与できるし、美味で、風
味のある一定品質の乾海苔を多量に得ることがで
きる。

に調整された混合物の塩分を検出し、その検出値
が設定値以上のときは清水を供給し、この濃度調
整槽の水を清水と置換し、一方その検出値が設定
値以下であるときは海水を供給し、この濃度調整
槽の水を海水と置換して適正塩分に調整し、この
調整された混合物を海苔抄機に供給することを特
徴とする海苔混合物の塩分調整方法。 2 適量の水と海苔原料とを移送する調合機の後
に配設される濃度調整槽と、この濃度調整槽等に
設けた塩分検出センサーによつて適度の海苔濃度
に調整された混合物の塩分を検出し、その検出値
が設定値以上のときは濃度調整槽の水を清水と置
換し、一方その検出値が設定値以下のときは濃度
調整槽の水を海水と置換して適正塩分に調整する
と共に、この濃度調整槽等に設けた海苔濃度セン
サー等で海苔濃度を調整し、適正塩分及び濃度に
調整された混合物を海苔抄機に供給することを特
徴とする海苔混合物の塩分調整方法。
