Abstract

PURPOSE:To obtain pine leaf extract having excellent sweet and acidulous taste and aromatic smell and free of unagreeable odor, at a low cost, by washing the leaf and sprout of Japanese red pine, cutting the leaves, putting together with mushroom into a sugar syrup and fermenting the mixture. CONSTITUTION:The leaves of Japanese red pine and its sprouts of about 5-50mm long are washed with water, chopped to 2-3mm long and put into a container together with mushroom such as Flammulina velutipes cut to 2-3cm long.
