.0〜4.0%程度である。通常、酵素添加量が多いほ
ど、エキス収率は増加する。なお、セルラーゼおよびペ
クチナーゼを併用する場合の使用比率は、重量比で前者
1に対し後者0.6〜1.5程度とすることが望ましい
。酵素処理の温度としては約34〜54°Cが適当であ
り、約50゛Cで最大の抽出率が達Ik、される。pH
は約4.25〜5.55に調整することが望ましく、最

が著しいので、全体としてのサポニン抽出率は増加する

実施例 1
乾燥朝鮮人参IKgをミキサーで粉砕して35メツシユ
の篩を通過する粉末にした後、水4Kgを加え、100
°Cで10分間蒸煮した。冷却後、ペクチナーゼSSお
よびセルラーゼYNCそれぞれ4%濃度の水溶液10Q
mlを添加し、1/2ON酢酸緩衝液でpHを4.5に
調整し、50℃で5時間、酵素反応を行わせた。次いで
沸騰水浴で10分間蒸煮して酵素反応を停止させた後、
99.5%エタノールを11.5Q加え、70℃に5時
間加熱してエキスを抽出した。冷却後ろ過を行い、ろ液
を蒸発乾固させ、更に105℃で乾燥し、ジンセフサイ
