Abstract

PURPOSE:To obtain Panax ginseng extract in a short time in high yield, by extracting Panax ginseng after the treatment with cellulase or pectinase. CONSTITUTION:In the extraction of Panax ginseng, the Panax ginseng to be extracted is treated with cellulase or pectinase before extraction. Raw Panax ginseng may be used for the extraction raw material, however, it is preferable to use a dried Panax ginseng to obtain uniform powder and enable the enzymatic treatment under stable condition. The enzymatic treatment is carried out by suspending crushed Panax ginseng in about 5 times volume of water. .0〜4.0%程度である。通常、酵素添加量が多いほ
ど、エキス収率は増加する。なお、セルラーゼおよびペ
クチナーゼを併用する場合の使用比率は、重量比で前者
1に対し後者0.6〜1.5程度とすることが望ましい
。酵素処理の温度としては約34〜54°Cが適当であ
り、約50゛Cで最大の抽出率が達Ik、される。pH
は約4.25〜5.55に調整することが望ましく、最
も好ましいpi−(は約4.5である(無調整の場合、
pHは約5.0〜5.5になる)。

 1acteus由来、協和発酵)またはセルラーゼ「
アマノ」A3(八spergillus niger由
来、天野製薬)を用いた場合のエキス抽出率を表1に示
す。

を蒸発乾固させ、更に105℃で乾燥し、ジンセフサイ
ド含有率2.0%の抽出物681gを得た。
