。不燃性ガスは液化ガスとしてフロン12,114゜1
1等があるが、これらのものは合成物であり食用品での
使用は認められていない、圧縮ガスとして窒素ガス、炭
酸ガス等が有るが、炭酸ガスは水を含有した組成物であ
ると、水忙溶解し、炭酸水となり、ガス圧が低下し、炭
酸水による酸性にょシ味が酸味を呈したシ、エアゾール
容−の腐蝕を起す原因となi使用出来なti、 tた。

れに同温度の水を加えて、水中油型の乳化物を調整する
食用油の適正量は約20〜45%、水は78.5〜45
